In this article, we provide an overview of the historical evolution of viticulture in Europe from its origins to the present, and identify appropriate farming practices to accomplish sustainability requirements of the new CAP. We propose integrating organic management strategies together with historical practices developed by ancient cultures to meet the goals of the new CAP and advance towards a more sustainable future for agriculture. Our suggestions aim to improve the environmental conservation of agricultural ecosystems and reduce production costs while coping with possible associated yield reductions.
